This fiery Thai-inspired salad is a perfect little dish to serve during the summer months when entertaining outdoors. It’s great to pair with smoked fish or crispy roast chicken as it beautifully enhances the flavours with smooth textures and sweetness.

Ingredients
- 1 mango cubed
- 1 avocado sliced
- 1 lime juiced
- 2 hot chilli peppers sliced
- 1 tbsp Thai fish sauce
- 1 handful edamme beans
- 1/2 red onion finely chopped
- 1 small handful coriander
- 1 large handful rocket
This salad is really so adaptable, play with it to discover your favourite flavours. The key ingredients are mango, avocado, Thai fish sauce and chilli. Experiment with other flavours and textures, try adding soya beans, watercress or red radish for more of a crunch.

Step by Step Instructions
Step 1
Chop mango into chunks and slice the avocado, set aside. Finely chop the chilli peppers and onion, and tear the coriander. Place all these ingredients into a salad bowl.
Step 2
Add edamame beans to the salad bowl. Then in a small bowl or cup make the salad dressing. Mix together the Thai fish-sauce and lime juice, add seasoning if desired.
Step 3
Place a handful of rocket into the salad bowl. Gently toss together the salad.
Step 4
Finally pour over the thai fish-sauce and lime dressing. Serve with your choice of protein. A glass of vino too if you fancy – cheers and enjoy! Emma x
