Ingredients
- 2 whole Bok choy head
- 200g pork tenderloin
- 1/2 medium yellow pepper
- 20 sugar snap peas
- 1/2 medium carrot
- tomato puree
- cider apple vinegar
- 1 tsp five spice
- 3 tsp olive oil
- 50 grams noodles
- 1/2 medium red onion
- 6 leaves dark leafy greens
- fresh ginger, sliced
- 2 cloves garlic, crushed
- 3 tsp sesame seeds
- 20g cashew nuts
- 100ml water
Instructions
- Heat the olive oil in a wok until sizzling.
- Slice the pork into bite-sized chunks, add to the pan, toss pork in pan until browned.
- Mix up a paste of tomato puree,cider vinegar and five spice, set aside.
- Add the onion,cook until translucent, then add carrot,pepper, sugar snap peas,and cook until they sweat. In the meanwhile prepare noodles as per package instructions. Continue to stir ingredients, until lightly cooked, about 3 minutes.
- Add leafy greens, bok choy, garlic, ginger and cashews to the pan, stir, then add ready-made paste and water, steam for 3 minutes until vegetables are lightly cooked, and crunchy.
- Add noodles and stir. Sprinkle with sesame seeds and serve immediately.
