Ingredients
  1. 2 medium aubergine
  2. 4 small courgette
  3. 2 sweet red peppers
  4. 400g canned tomatoes
  5. 2 tbsp olive oil
  6. small bunch basil
  7. 1 medium onion
  8. 3 garlic cloves
  9. 1 tbsp red wine vinegar
Instructions
  1. Slice the aubergines, courgettes, peppers, onions and tomatoes roughly into thick chunks.
  2. Sauté vegetables in hot oil, over medium heat. Cook for 10 mins turning the vegetables so they don't overcook.
  3. When vegetables become tender add the tomatoes and garlic, bring to the boil then simmer for a further 10 mins, last add the vinegar and basil, stir and enjoy!
Notes
  1. Serve up in jacket potatoes, or with rice or even put into a tortilla.
  2. Why not make up a double batch and freeze ready for a busy day.
