Ingredients
- 2 medium aubergine
- 4 small courgette
- 2 sweet red peppers
- 400g canned tomatoes
- 2 tbsp olive oil
- small bunch basil
- 1 medium onion
- 3 garlic cloves
- 1 tbsp red wine vinegar
Instructions
- Slice the aubergines, courgettes, peppers, onions and tomatoes roughly into thick chunks.
- Sauté vegetables in hot oil, over medium heat. Cook for 10 mins turning the vegetables so they don't overcook.
- When vegetables become tender add the tomatoes and garlic, bring to the boil then simmer for a further 10 mins, last add the vinegar and basil, stir and enjoy!
Notes
- Serve up in jacket potatoes, or with rice or even put into a tortilla.
- Why not make up a double batch and freeze ready for a busy day.
